Our Giant Pumpkin

Screen Shot 2016-01-11 at 07.46.52We’ve been keen to share our pumpkin so when one of our plotters had an idea to hold a ‘guess the weight’ competition at St Keyna school we were really pleased. The winning pupil received a gift voucher donated by Whitegate Garden Centre having guessed 22kg – the actual weight was 21.3kg!

The pumpkin then made an appearance at ‘Messy Harvest’ for children at Queens Road Methodist Church before being cut into pieces.  Some was sold at St Keyna Green Team’s autumn sale and the rest was all given away as part of Community @ 67’s  fruit and veg scheme together with a simple recipe for pumpkin soup.

 

Pumpkin Soup

1kg pumpkin (peel, remove seeds and cut into 2.5cm cubes)
1 onion (sliced)
1 clove of garlic crushed
1 litre vegetable stock (hot water and 2 vegetable stock cubes)
1/2 teaspoon ground ginger
1 tablespoon lemon juice
salt and pepper

Bring all the vegetable ingredients with the stock to the boil in a large pan over a medium heat.

Add the ginger, lemon juice, salt and pepper.

Cover pan with lid and simmer on a lower heat for about 20 minutes until the pumpkin is tender.

Cool slightly before blending (mash with a potato masher or a hand held blender or in a food processor) until smooth.
